Would it be smart to drink some dextrose-water while working out, against the quick rise of cortisol while training? If yes, at what dose and should I adjust my post-workout dextrose intake if I would do this?

actually a good portion of powdered gatorade is sucrose. there is some dextrose in there as well.
suck on sweet tarts during your workout. they are half dextrose and half maltodextrin.

i have my own crazy ass drink for when i workout and i will share the recipe with you.
The night before you workout make three cups of green tea (three cups of boiling water, toss three bags of green tea in and let steep for a couple minutes)
I put a couple ice cubes in the mixture to cool it down quick, add a scoopful or so of lemon flavored gatorade, and leave it in the fridge overnight.
It tastes like lemon flavored iced tea, has dextrose in it, and you get a good amount of green tea in there too boot.

I also have read that consuming any carb during the workout [and pre workout] will slightly decrease insulin sensitivity on the 'window hours', a very potent tips to increase insulin sensitivity is adding 15 min low intensity cardio after workout, after that, you can binge as much as you can [even sometimes I`ll eat more that 6000cal after workout during the 'window hours' <not in one time of course :P> ]...
