man I love sushi, I have seen that chart before but have my reservations about it, b/c it is not a cookie cutter preperation when sushi is made. I go to this one spot that serves the biggest damn tuna rolls you have ever seen, they must be like 50grams per roll at least, it is a lot of tuna, and then i go to this other place and they are dinky as hell
