Tajine recipe

This is a BB fiendly version of a typical maghribian dish. Itīs usually done in a special pot formed of a heavy clay (the tajine), but we can do it using a normal pot.

Itīs an easy recipe, but it takes a while to make it, as tajine dishes are slow-cooked at low temperatures (1ī5-2 hours for beef, which is what Iīm going to use). You can also use chicken or, even better, lamb.

Buy ultra lean beef meat, we donīt want too much fat here. I buy a kilo for this recipe, so I have about three meals.
  • Chop the beef and put it in the pot with two chopped onions and 15-20 ml of olive oil (avoid oil if you want less fat). Add two cinnamon sticks, two teaspoons of ground cinnamon (cinnamon is essential for this recipe) and saffron, salt (to your liking) and black pepper. Fry it with high heat for about five minutes.
  • Add water until you cover the meat. Add some ginger if you like it. Cover. Now we want low heat for about 1ī5 hours.
  • Put about 300g of prunes and 100g of raisins into mild water, with some lemon slices and a stick of cinnamon.
  • When the beef is almost ready, add prunes and raisins (without the lemon and water). Pour some honey.
  • Serve with almonds (toast them if you want, I use them raw).

Now, if you want carbs, this tastes better when combined with cous cous. So, if you want:
  • Boil water (1 water: 1 cous cous) with some salt. Add some cabbage and chickpeas.
  • Take out of the heat and add pre cooked cous cous. Let it absorb the water for 5 minutes and serve.
