Asian Lettuce Wraps...
Been perfecting these for this entire prep...they're a great pro/fat meal and super tasty.
You'll Need: A protein source - chicken or steak cut into strips, or shrimp Veggies - I use red, green, and orange peppers, as well as mushrooms, onion, and occasionally carrots. Lettuce - 3-4 LARGE full leafs of romaine or butter lettuce Sauce - soy sauce, chili paste, corn starch, garlic, splenda 1-2 tbsp olive oil Directions: Finely chop 1 clove garlic, cut up all your veggies into bite sized pieces, cut protein into strips (I usually cook my protein ahead of time for faster cooking time) Preheat the pan to medium heat and add 1-2 tbsp olive oil (depending on your fat needs). If your protein is raw, add it and brown the meat with the diced garlic. Add the veggies first when the meat is browned. If your protein is precooked, blanch the veggies to soften them up and then add the protein. I usually season my protein with salt and pepper as well. Prepare the sauce - 2 tbsp soy sauce, 1 tsp chili paste, 1/2 tsp corn starch, 3/4 tbsp splenda/stevia When the protein is cooked through and the veggies are soft, stir in the sauce - it is spicy and sweet (and low cal ), and then toss the stir fry in the sauce and let it cook for about 1 minute to allow the sauce to thicken. Spoon your stir fry on top of your large lettuce leaves, and then roll them up like a tortilla, leaving the stem area of the lettuce open. Eat up!! Use the appropriate amount of protein source, and add all the veggies you desire. The more you have to eat, and depending on the size of the leaves, the more lettuce wraps you'll make. I generally make 2-3 wraps, again depending on lettuce size. Essentially zero impact carbs, and kind of a spicy-teriyaki like sauce. Don't use too much sauce or it'll be really runny and messy. Less is more. ![]()
