nutritional value of organic chicken and beef?

I've been buying organic chicken and beef from a local farmer's market and I find it easier to digest this food than the store bought stuff I used to get. Does anyone know if the fat/carb/protein amounts for these two foods is about the same as store bought stuff or is it leaner?

I watched the grocer grind up some ground beef for me one day when they were all out. They took out these sealed bags that had "Certified Organically Grown Beef" labels and they were all steaks which he put in the grinder.

When I make the beef into patty's they don't sizzle on the BBQ like regular (or even extra lean) beef does, and they tend to retain close to their original patty size when they're done. The flavour is something else and they're easy on the digestion (as is the chicken).

I've had the same issue with grass-fed beef as well.
